About the Roast
This Mexico Chiapas is one of the very first coffees we roasted. While it has taken a break from our shelves during it’s out of season times, it still comes back and is a fan favorite for it’s great nutty, citrus, and apple notes. We take this Mexico to a medium roast, dropping midway through First Crack.

About the Region
The Chiapas Highlands are rich in rainfall and nutritious soil, and the coffee farms at 1200-1750masl are naturally shaded by a lush forest canopy that blankets the Sierra Madre de Chiapas mountains. The coffee-cultivating Soconusco region borders Guatemala’s Huehuetenango department, sharing the area’s complex characteristics and rich, balanced chocolate tones. Over one-third of Soconusco’s arable land is dedicated to coffee production, and the region holds a long history of producing substantial volumes.

In 2013, coffee leaf rust decimated coffee production in Central America. Due to Chiapas’ proximity to Guatemala, it was one of the first regions to succumb to the fungal disease, but it was also one of the first to bounce back. Today, Chiapas is leading the charge in innovation and investment to bring Mexico’s coffee production back up to speed. The renowned region is producing high-quality unroasted coffee beans at even higher volumes than before.

Everything that went into growing this Organic green coffee was natural, with an emphasis on conserving and revitalizing the land’s resources. Most of the farmers in Chiapas are smallholders, and their economy depends on producing high-quality raw coffee, it’s primary cash crop. With a delightful chocolaty, nutty cup profile, this coffee is a stunning example of Chiapas’ agricultural excellence.
